So my sister works at a preschool, and she was telling me how they added peas into caesar salads to hide more veggies, and I thought it was genius! And why not try to make it even more healthy by subbing out the lettuce with kale?…Caesars are probably the most unhealthy salad, but most liked, so here’s a way around it!
Ingredients: Serves 3 – 4
- 1 bunch of kale
- 1 cup frozen peas
- 1/2 grated parmesan cheese
- 1 cup croutons
- Caesar dressing (the amount is up to you)
Directions:
- Thaw the frozen peas
- Chop and wash the kale
- Place the thawed peas into boiling water for about 30 sec – 1 min, drain, and let cool
- toss the kale, peas, cheese and dress with caesar dressing
- Enjoy!
Really good idea and I love peas, I’ll have to try this!
