Kale Pesto with Lemon Butter Lobster



Ingredients: Kale Pesto Spaghetti (Serves 2)

  • 4 oz spaghetti
  • 1 Bunch of Kale, stem removed, only keep the leaves
  • 1 bunch of sweet basil
  • 1 cup olive oil
  • 1/3 cup Parmesan cheese
  • 1/3 cup pine nuts

Lemon Butter Lobster:

  • 2 lobster tails
  • 1/4 cup butter
  • 1/2 lemon, squeezed


  1. Boil the pasta, drain
  2. In a food processor, blend the kale, basil, pine nuts, and cheese
  3. While processor is still running, slowly drizzle in olive oil until it combines and has the consistency of sauce, make sure it’s not too thick, if it is, just add more oil
  4. Mix the pasta and the pesto together
  5. Boil the lobster tail until cooked (about 5 min)
  6. Drain and let it cool, take off the shell and slice into 1 inch pieces
  7. Now melt the butter and combine with lemon for the lobster
  8. Plate and brush the lemon butter on top of the lobster
