Miso Duck a l’Orange

Orange Sauce Ingredients:

  • 1/3 cup sugar
  • 1/3 cup fresh orange juice (from 1 to 2 oranges)
  • 2 tablespoons white-wine vinegar
  • 1/8 teaspoon salt
  • 2 to 4 tablespoons chicken stock
  • 1 tablespoon unsalted butter, softened
  • 1 tablespoon fine julienne of fresh orange zest,
  • 2 tsp miso paste

Sauce Directions:

  1. Boil the orange juice, and add the sugar
  2. let it reduce and add white wine vinegar, salt, chicken stock
  3. once combined, add in the miso paste, butter, and zest
  4. Set aside to cook duck breast

Duck Breast:

  1. For about 8oz sizes, make small cuts into the skin and salt both sides
  2. let rest for 10 min and use paper towel to soak up the moisture
  3. cook on frying pan at medium high heat for 7 min each side
  4. remove from heat and let rest for 10 minutes
  5. cut into slices and plate
