Salmon Poke Tacos


Salmon Poke Ingredients:

  • 1/2 cup soy sauce
  • 1/4 cup sugar
  • 2 cups cubed Salmon
  • 1/2 cup cubed cucumber
  • 1/2 cup cubed red onion
  • 1/2 cup cubed avocado
  • Sesame & seaweed seasoning (Can be found in the import aisle in superstore or any T&T market)

Salmon Poke Directions:

  1. boil the soy sauce
  2. add the sugar and stir until the sugar has melted, take it off the heat
  3. put into refrigerator and let it cool into a reduction
  4. chop up the salmon, cucumber, red onion, and avocado
  5. when the soy sauce reduction is completely cooled, pour it onto the chopped poke
  6. mix well and add the Sesame & seaweed seasoning to taste.

Rice Taco Shell Ingredients:

  • 2 Seaweed sheets
  • 1/2 cup uncooked sushi rice (after cooked, add 1/2 tbsp rice vinegar), allow to cool

Taco Directions:

  1. Cut the Seaweed sheets into 3 inch circles
  2. cover with thin layer of the rice
  3. Fill with the poke and fold over
