Buffalo Chicken Filled Muffins

If anyone knows me, they understand my obsession with buffalo chicken & blue cheese. I don’t know what it is, but to me, it’s the perfect combination of everything I love!

Ingredients:

  • I roll of pillsbury biscuits
  • 1/2 cup – 1 cup blue cheese crumbles
  • 1/2 cup buffalo sauce
  • 2 1/2 premade breaded chicken nuggets (Mine were the size of my palm, so adjust accordingly to the premade nuggets you find) – diced into 1 cm cubes
  • 1 egg for egg wash

Directions:

  1. Open the pillsbury biscuits and flatten each one
  2. Add the 1 tsp buffalo sauce first into the center of the biscuit, then 1 tsp, or more if preferred the cheese, then the chicken (about 5 – 6 cubes)
  3. Now close up the biscuit and pinch the bottom closed
  4. place into an oiled muffin pan, pinched side down
  5. Repeat for all the biscuits
  6. brush with egg wash
  7. Bake for 15 – 18 min at 375 (or according to instruction from the pillsbury package)
