Beef Tartare



  • 1 egg yolk
  • 1 fillet of round eye steak
  • 2 shallots
  • 4-5 stems of chives, chopped
  • 2 tsp capers, minced
  • 1 1/2 tbsp dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp Worcestershire sauce


  1. Chop up the steak into little cubes and refrigerate
  2. Chop up the shallots, chives, capers together and combine with steak
  3. Add the mustard, lemon juice, Worcestershire sauce to the mixture
  4. salt and pepper to taste
  5. Plate with baguettes or crackers
  6. Form a dip in the middle of the tartare, and drop the egg yolk carefully inside
