Drunken Spaghetti


Drunken Spaghetti! Tip: do not use whole wheat or “healthy spaghetti”. It leaves a grainy finished, and takes away from the wine taste and color


  • 1 box spaghetti (I buy smaller boxes, so about 2 rings – my measurement of the circle that forms when I put my thumb and index finger together ha!)
  • 4 cups red wine
  • 3 cups water
  • 1/3 cup red wine for reduction
  • 3 cloves of shopped garlic
  • 1/2 cup shaved Parmesan
  • 1/2 cup chopped parsley


  1. Boil the 4 cups red wine and 3 cups water in a pot, add a bit of salt
  2. Add the pasta bring to a boil, reduce to med heat and cook pasta
  3. while the pasta is cooking, in a sauce pan, pour the 1/3 cup red wine and add garlic
  4. Let it simmer and cook out the alcohol
  5. Drain the pasta and add to sauce pan to stir
  6. Garnish with parsley and parmesan
