Coconut Shrimp & Rice inside a Pineapple

I love the combination of Coconut and Pineapple, especially in Asian dishes, I always try to order pineapple rice at restaurants. So Yummy! The pineapple juice soaks in perfectly with the coconut rice

Coconut Rice:

  • 1 can of coconut milk
  • 1 1/2 cup rice

Coconut Shrimp:

  • 1 can coconut milk
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
  • 1 tbsp hot water
  • 2 cups shrimp, out of shell

Directions:

  1. Hollow out a pineapple and cut it in half
  2. In a rice cooker, wash the rice and pour in the coconut milk, add additional water if needed
  3. in a sauce pan, bring the coconut milk to a simmer and add vanilla extract
  4. combine the cornstarch with the hot water until it becomes a paste
  5. add into the coconut milk and stir, the sauce should become thick
  6. add in the shrimp and stir until fully cooked

You have a choice to bake this for 15 minutes to really get the pineapple juice to come out. But I was too hungry. Nom Nom Nom.
