Thai Orzo with Coconut Shrimp


Thai Orzo with coconut shrimp! I wanted to make a little twist on the thai noodles and used Orzo instead. I also cheated a bit and used campbell’s Thai soup as the sauce. But still very good!

Ingredients: Serves 2

  • 1 cup orzo noodles
  • 12 shrimps
  • 2 cups of sweet coconut flakes
  • 1 egg
  • Campbells thai soup
  • sweet chili thai sauce


  1. Preheat oven to 350 Degrees
  2. wash and de-shell the shrimp
  3. dip into whipped raw egg and cover with coconut flakes
  4. lay onto a baking sheet
  5. Bake for 10 min on each side
  6. boil the orzo noodles, drain and add back into pot
  7. Add the campbell’s soup and stir
  8. Drizzle the sweet thai chili sauce ontop
