Cauliflower Crust Pizza

I LOVE pizza, but I always feel guilty eating so much, so here’s a healthy alternative, granted, the healthy part is counteracted with the toppings. But still, I’d like to think I made a slight difference in my body by cutting out the bread….

CRUST:

Ingredients:

  • 1 head of cauliflower
  • 3/4 cup ricotta cheese
  • 1 egg
  • 3-4 branches of Basil

Instructions:

  1. Rip off the cauliflower into little florets, wash, and throw them into a food processor
  2. after pulverizing the cauliflower into “cauliflower rice” it should look like rice when you’re done, empty into a large microwavable bowl
  3. Microwave for 8 min
  4. Watch out! when you take it out, there will be a lot of steam and liquid in the bowl
  5. Here is where you can skip baking the crust for 1hr, cut down to only 20 min!…. take a cheese cloth and dump the cauliflower into it. Now, WRING out all the water, there’s going to be A LOT of water
  6. now put back into the bowl and add the ricotta, egg and minced Basil
  7. Use your hands! Mix until completely combined
  8. Spread onto baking pan and Bake for 20 at 375C
  9. When finished, take out the crust and add your toppings as you would a normal pizza
  10. Bake again until the toppings are cooked or until cheese melts
  11. Now enjoy without the guilt! (kinda)
